Finally a butter cake just like the one I love to order from California Pizza Kitchen. Eat warm with a scoop of Haagen-Dazs vanilla ice cream. It took a few tries to get this right. The first time I made the cake I wanted to bring it to the office, so I thought why not make one cake in a larger spring form pan. After 75 minutes in the oven I pulled out a piece of art. So perfect with a brown crunchy buttery crust.  I couldn’t wait to cut into this cake and start taking pictures, my friends at the office are going to love this cake. Big mistake! All I could think of was the pound of European butter gone to waste. So the moral of this story, do not use one pan for this cake. I like the Fat Daddio’s cheesecake pan 3″ x 2″ with the removable bottom, perfect for individual servings  Enjoy…..

Ingredients
  1. For the cake batter
  2. 2 cups (4 sticks) unsalted butter, room temperature
  3. 4 ounces cream cheese, room temperature
  4. 2 1/4 cups granulated sugar
  5. 2 large eggs, room temperature
  6. 1/2 teaspoon salt
  7. 1 1/2 cups all-purpose flour
  8. 1 1/2 teaspoons vanilla extract
  9. For the Cream Cheese layer
  10. 4 ounces cream cheese, room temperature
  11. 1 egg, room temperature
  12. 1/3 cup granulated sugar
  13. 1/2 teaspoon vanilla extract
Instructions
  1. Preheat oven to 325.
  2. Prepare your choice of pans with baking spray. Remember, use either 4 small spring form pans or 6 small individual pans.
  3. Using a stand mixer prepare the cake batter. Cream the butter, cream cheese, sugar and vanilla for about 2 minutes. Add the eggs one at a time and beat on low then add the flour and salt again beating on low until the dough is just coming together, do not over beat.
  4. Prepare the cream cheese layer
  5. Using a smaller bowl add the cream cheese and sugar and mix. Once creamed add the egg and vanilla mix until smooth, set aside.
  6. Pour cake batter into the pans, the batter will be thick. Top with a layer of the cream cheese mix. Bake for 65 – 75 minutes, or until tops are golden brown and a toothpick comes out clean when inserted into the center of the cakes.
Notes
  1. If you plan to re-heat in the Microwave use about 75% power for about 7 seconds. The cake has a lot of butter and can get hot fast.
